Very soft, assuming they're clean microfiber and they've been washed before their first use. Yes, they absorb a LOT of water. If you use the "drying with the hose" method, one MF drying towel should do the whole car. Plenty of places sell them, pakshak.com has a ton of MF towels, Autopia-carcare.com (Sonus brand), exceldetail.com (GREAT washmitts, too), Meguiar's and others.

Drying With the Hose: take the sprayer off the end of the hose and let a smooth steady stream of water "sheet" over your car. Follow the sheet with the hose (back and forth, maintaining the sheeting) down whichever way it goes and it'll take 90% of the water off the car. Only works with a clean, waxed surface (haven't tried it with a polished/unwaxed surface).
