It's not just about the forged pistons.. Yes, forged pistons themselves are stronger, but they're also lighter and therefore reduce the mass of the rotating assembly. They could have also taken the opportunity to alter the compression ratio (if desired).

Hand building & blueprinting an engine allows for optimal & balanced clearances, tolerances, etc. helping achieve maximum power output while improving reliability. STI could have taken the opportunity to improve the volumetric, thermal and/or mechanical efficiency of the engine. Of course, properly building an engine is no small task and requires a lot of time, money, and spare parts to ensure all of the components perfectly match. Subaru was already behind schedule for a "2019" model release.. and clearly had a hefty price tag in mind.

Would this have had a drastic improvement on the lap times? Probably not.
Does it add significant value and uniqueness to Subaru's $65k halo car? Absolutely.

Edit:
This isn't me bashing the S209 by any means or whining that it doesn't have forged pistons. IMO, the S209 would have still been more valuable and special even if it had a hand-built & balanced engine utilizing the existing cast hypereutectic pistons. Forged pistons are still gladly welcomed
Just look at the pride that AMG puts into their hand-built engines.
I agree with everything you said, I think they realized though that forged pistons simply werent necessary, as they already had an improved cast piston in production, and that it probably was an issue with getting the car out to dealerships as soon as possible so it was a time thing so they moved away from that. It probably would have added 3-5000 to the price of the car. as well. The Cosworth hatches sold for the equivalent of $70,000 for example.

As its Thanksgiving we should all be thankful that they are at least "getting there" and have made good on their making the U.S an exclusive market for these upgraded STI's since before the RA or the S209 all we got were styling changes.

Much cheaper actually for S55 cars-

BootMod3 license (most popular tuning platform for Fxx cars) - 595 (includes 1 OTS Map).
Stage 1 - 480+ whp (stock hardware)
Stage 2 - 500+ whp - downpipes recommended
E85 custom tune - 600 whp - catless downpipes but 100% stock fuel system - $500 is what the reputable tuners charge via Bootmod3 or MHD.
Plus ECUTek is now out for S55 cars and more tuners are getting involved.

S55 is a beast. DME has to come out on the newest cars tho (M2C), tuners have not craced it yet to flash via OBD.

LOL....the S209 is seriously corked up as delivered. A 3" dowpipe and tune to maximize it is going to put this car over 400 horsepower with ease. Also the S209 platform is a faster car horsepower for horsepower relative to the M2.

So its $1,171 to get 23 horsepower for a plastic bimmersport intake and then you need another $749 to get the extra tuning beyond the reflash for the intake to get the extra 84 horsepower. Then by their own rather unbelievable description the car becomes undrivable on the street because it appartently gets turned into the fastest car ever. LMFAO. Honestly its sounds like the more power it makes the worse it becomes as far as being able to use it and its probably go. The STI has an advantage there.... I'm guessing a tuned S209 with a 3" exhaust and optimized boost(400+ horsepower for under $1,000), would rape that M2, as the S209 will actually be able to put the power down and not crash into a tree fishtailing.
