Default Cobb Stage 2 with gutted DP

I am purchasing an AP soon for my 2002 WRX and was wondering if I can run Stage 2 map by gutting my downpipe.

I have the HKS carbon ti catback now and that is all for exhaust mods.

Will be getting DP/UP a few months afterward.
Should I just wait or can I run stage 2 by gutting it?

Gutting your DP will work fine with Stg2 map, but compare to Cobb's "Ideal" Stg2 setup, you still have the stock 3rd cat as the airflow restriction. You won't getting the most out of Stg2 map, but it is safe and you still notice significant power improvement.
The stock 2nd cat is the one which bothering most power, compare to other exhaust elements such as UP cat, 3rd cat, resonator, axleback.

However, if you will get UP/DP anyway after few months, then I will strongly suggest you to run Stg1 for now, because after few months you are going to re-install the DP and replacing the turbo-to-DP gasket. If you are really power-thirsty and don't mind doing the re-install of DP, go ahead

If you are looking to save a little cash, I would watch for used exhaust bits in the classifieds. There are nice uppipes/downpipes for sale all the time.
