It's my understanding that you'd have to turn lane assist off every single time you drive the car. You can't just turn it off just once during ownership...is my understanding (like I do with hill assist on my old wrx and current sti...or like I do with my seat belt chime when unbuckled for example)

Kinda depends on the purposes of the vehicle. We use the heck out of the adaptive cruise in the Ascent. It freakin' works and I trust it. That's the road trip vehicle. Lots of highway miles. I've even used it in town on occasion.
I have no use or need for anything driver assist in a WRX/STI/BRZ/M2C etc type vehicle because my purpose for that vehicle is not road tripping / hours on the highway. Not to mention I'd have an MT anyway which wouldn't jive with adaptive cruise so well.

With Subarus, if you turn off Lane Keep Assist (or Lane Centering, etc), it stays off until you turn it back on, or I think until the battery is disconnected also.

The feature you have to turn off each time is collision avoidance. Takes about 2 seconds. I typically turn it off, unless I'm feeling especially fatigued and don't 100% trust myself to react well, like driving in the deep dark of night/morning.

Part of my job. Make sure the customer knows the specifics. Sure enough as soon as I say "about 2 seconds" I'll get calls back saying "You said 2 seconds".

They do not have the digital cluster, but they do have the illuminated collision warning. I assume you are referring to the LED bar that goes off when you cross lane or if there is a sudden object in your way.
Isn't that LED bar standard on Eyesight equipped cars?
I have never seen an Eyesight equipped WRX, but I would think they would have them.

Update:
Leaned something new... 2021 WRX CVT has the LED bar like the ones on Legacy and Ascent.
