I’m flying to Orlando wed night. What do I need to do in the airport and what to bring home?

Should I pack bricks of cheese and bundles of wire? How many extra bags am I going to need to bring back stuff for OT?

Walk in naked, with no luggage or carry ons, that way they'll only have to do minimal searching.

if you are planning on buying a ton of stuff, just throw a duffel bag in with you luggage for dirty clothes and put the stuff you buy in your suitcase...
