Whoa. What's your grind/tamp procedure? walk me through the steps.

Also, are you using a new bean, or did you roast differently?

Well, this is with 3-6 day beans (After roasting), same beans as I was using in Ohio, roughly the same roast levels (city+ to full city, hard to hit exactly what I want with an air-roaster) Same grind size...

I weigh out 15g of beans, and toss them in the hopper of my MD-50, grind out and dispense into the basket. Then I tap the filter on the counter to sorta re-distribute the grounds, then tamp as best I can to ~30lbs and then spin the tamper to "polish". then I run a "cooling shot" to force the head to boiler temp (Tends to run hot), then I mount the porta filter and pull the shots. I am getting ~25-35 seconds to 2oz, so I thought I was good, but for the past week, I have been getting that odd channeling. I have not run any sort of de-calcification as I did that about 4 weeks ago, but I might have to do it again, but I was not getting any of this channeling before the last time I did this.

every drop of water I have put into this machine is through a britta pitcher, as my old house had a water softener and this new place the water smells a bit chlorinated.

If you tell me to de-calcify again, I will do it, but just wanted an opinion.

It's generally a distribution issue. Do the grounds clump out of your grinder? If they are clumped when you tamp, you'll get nasty channelling. A difference in humidity and temp from the move could require a different distribution technique.

I generally updose the PF so it's highly mounded. I perform a modified Stockfleths circular sweep, then sweep the mound off NSEW, tamp, pull shot.

As far as water, buy some Fiji just to see how it changes the taste, and modify your water supply from there.

The chop-chop method? Another way is to simply take a toothpick and stir the grounds in the pf. I would go crazy after 2 shots of doing that, and stab myself in the eye.

I did the toothpick method this morning and got exactly the same channeling as yesterday, and the week leading up to yesterday...

Weird. I'd say maybe pump pressure is too high, but you said the extraction time is ok.

Too fine of a grind + too high of pump pressure = normal extraction time + channeling?

This is one of the most progressive and quality focused farms around the world. The view of the farm is impressive. It looks like a perfect variety garden.

This is one of a few different experimental single variety projects at Granja La Esperanza. Everything at this farm is focused towards quality improvement. Data for every imaginable detail is logged in order to find correlations between different variables and positive results.

The warehouse were coffee is stored is temperature and humidity controlled.

Each new variety projects takes about 10 years to be in full production. The first five years are only to determine if the project is viable (only a few acres are planted). The next five years is what it takes for the variety to be in full production.

Varieties are bred selectively to produce only pure offspring.

What? I was being serious. I'm a complete novice in the coffee world who normally buys target and maxwell house brand coffee. So Folgers seemed to be a big step up for me and I was genuinely excited. Yeah it is a little sad I suppose.
