Default ECT sensor temp vs voltage table

Doesn't anybody happened to have the conversion table for the coolant temperature sensor, temperature vs. votage? Thanks.

Not sure if they're different for other cars, but on my 05 STi (voltage and coolant temp in F)

* 1.> Are we able to manipulate the readings of the dashboard temperature gauge with this table?
* 2.> And / Or, Does this effect fuel enrichment as well?
