Default 02 WRX going stage 2!

Hey so I have read quite a bit and from what I have read I should be fine but want input from others before I press the button.

I have an 02 WRX currently has on:
- SPT Intake
- invidia catless up pipe
- N1 cat back

I have a V2 AP on the way along with a catless down pipe. So I should be able to go straight to stage 2 after down pipe is installed. Or will going stage 1 before be safer? I have read the newer maps are good with the SPT intake as I guess the old ones weren't? Will be doing data logging and is it better to drive granny style for a little bit before doing so? And if I just go with one of their Stage 2 Maps should I go with the stock or cobb one? Thanks in advance!
