I use a mapp torch, light as little or as much as you want depending on how much of a hurry you're in.

Just realize it is real easy to get hotter than your target temp and then it takes a long time to cool down from there. MAPP gas and a weed burner for me. After you light your first batch of brand new coal you'll quickly see why you want to be away from the egg when lighting it.

Yeah, I have a torch and a electric resistance lighter. If I'm going hot I'll use the torch, otherwise I put the electric one it and go inside and prep for 15 min while it lights off.

Default BGE - The Big Green Egg



Had a good cook today, did two Costco shoulders. Used my normal rub and did 210-225 all day. I was a bit nervous leaving for church but it was fine.

The first I wrapped at 165 so I could make it in time for dinner, total time on that was about 10-11hrs, the one I didn't wrap took about 12.

Both tasted great. The unwrapped one I liked a bit better but wife liked the wrapped one since the bark was softer.

This is my 7 y/o eating another small bowl of meat before bed.

I picked up an egg at the onset of our backyard remodel/pool installation. We got a nest so we could use for the period of time before built-in was ready for it.

Anyone need a nest? I will ship.

Anyone have a table similar to this one?


My buddy picked up a large egg and wants a table for it but not for $900. That one is all aluminum and I could make it for probably a third that price, maybe less. Seems like a nice piece but haven't seen one in person.

That's a nice setup. Not trying to get that elaborate for something that I'll be doing for cost of materials plus beer and a meal cooked on it. Thought about doing the one I posted in 316ss but it's pricey and a pain to cut and bend.

I’m surprised how much it can be used like an oven. Tonight we will do burgers.

Wife still uses gas but if I’m home we do the egg.

I typically just used the lump charcoal that was at home depot. Good price and not cowboy brand which has bad reviews.

I've tried a bunch of different types and the home depot stuff was comparable.

I can't believe I'm about to type this, but I looked at a Kamado Joe setup at Costco this weekend. If I ever decide to go bigger I'll probably go with one of those. They have really improved the design. It's got an ash catcher, a really nice hinge that makes the lid feel like a feather, a latch to latch it closed for a good seal, the top vent is nice too. They throw in a bunch of accessories as well. Lifetime warranty on ceramics just like bge. The only downfall I see is that they've only been around for 10 years.

Joe has surpassed BGE. At this point if you buy an Egg over a Joe, its because you either don't know, or you want the recognition of the Egg. I won't get one because I have no reason to, but there is no way I could justify paying more for less if I was in the market.

I tell my friends in the market to buy Joe's, they are far superior for the money.

Just finished up a bag. Did not do any long cooks with it, but seems to be a decent option. lights just fine around the same ash as BGE stuff. decent sized chunks with no extra rocks like ive gotten with BGE.

Did my first ever pork shoulder over the weekend. Got a 13.5 lb package from Costco and had read ~1 hour per pound. As I wanted it ready by early afternoon, I put it on the grill at midnight. Stayed up until 1:00 am watching everything and making sure the temps were stable(ish) and went to bed with it around 240 degrees. Woke up at 4:00 am with the temp up to 290. Tried to adjust it back down and it eventually went back under 270.

However, the shoulders hit 200 degrees by 6:30 am so I pulled them and then wrapped them in foil and a towel and then went back to bed. They ended up tasting great (for my first try) but I was surprised by the 6 1/2 hour cooking time instead of 12+ hours. My guess is that this is because they were two 6+ pound cuts instead of 1 big 13 pound hunk of meat?

This was my practice run for thanksgiving (pulled pork sliders FTW!!)

Hard to believe I've had my BGE for over 12 years now. I was wondering why I hadn't considered the Joe when I was buying it. Then I went back and looked at the date of the first post in this thread. Yeah, that company wasn't even created yet. But I agree, if I were in the market for a ceramic kamado style cooker right now it'd be very difficult for me to go with a BGE instead of the Joe.

I was just going to ask for recommendations for turkey too. I've not decided whether I will spatchcock mine but plan on smoking it. I've done them for thanksgiving in the past on the weber and really looking forward to doing it on the egg.

I've only got apple wood for smoke, is there a better one for turkey?

I've used the Simon and Garfunkel rub recipe from Amazing Ribs for the past few years. It's a pretty solid herb-based rub. Everyone likes it. It's not off-putting at all.

I usually do two or three turkeys for Thanksgiving, and I've smoked them for the last five years.

I also have used the simon and garfunkel rub with great success. There is another one I sometimes do that involves blending bacon and putting it under the skin, but I can't remember where it was from.

Spatchcock is the best, and takes your cook time down to about 2 to 3 hours. Though its pretty hard to get two on the egg in that configuration.
