Head unit hole will just be trimming that plastic surround piece. The speaker hole will have a shaped plate of some kind that will mount the tachometer covering that hole.

I've already got some anti-vibration stuff where the dash mounts in, but no sound deadening yet.

Flocking would look cool, and would definitely functional but would start to look ratty after a while. Most flocking I've seen starts to fade, and is difficult to keep clean. You have to be extremely careful if you vacuum it so you don't remove the fibers.
