Default Storing tires

Well my car is in winter mode now, and I have my summer tires sitting in the garage.

My question is should I store them with or without air pressure inside of them? Or does it not matter?

I always store with pressure inside the tire so they do not disform during storage. You should also lay them flat on the sidewall (front and back faces) so they don't develope flat spots

Put them in big trash bags as well, to seal them up. Keep the temp constant if possible to avoid heat-cycling them even as they sit. This is what we do for racing tires, but street tires are no less prone to degrading while they sit.

I'm about to get an STI and was planning on keeping the stock tires unmounted (putting on winters) until I found some wheels I liked. Is this going to be a problem for the tires?

You should let out the pressure, keep them on their side, seal them in a trash bag and keep them away from ozone creating items (like fridges and the like).
