Default How many aftermarket cats?

So I want to get the exhaust done this summer, but I'd like to do header back. I'm thinking Magnaflow, 2.25", blah, blah, blah, but I'm not sure on what to do about the cats. It sounds like most people are only using one when they move to high flow. Is anyone using two to replace the stock two? If not, I'm guessing you've got a permanent CEL. If you replace the cats, what to do about the OBDII?

I'd like to stay eco-friendly, so any help would be much appreciated.

Keep the cats, stock, or aftermarket. It's illegal in every state not to have cats.

I've got the MRT header / Cat with the MRT midpipe and have a permaCEL. I think it might be because my Pony Express MIL eliminator ($20 mod) came loose. I won't be able to find out for sure becuase my car has been out of commission for the last month due to an accident.
