There really aren't a whole lot of dirt roads...they are all paved in one way or another unless they're private property. But if you want some really dirty, gravely, backroads I suggest metcalf road. You can get to it from San Felipe or from Monterey Rd. It's really really gravely though so be careful and keep that in mind when braking.

But for some nice back roads there's Bailey rd. Which you can also get to off of Monterey rd. And of course the place that doesn't really exist but is still sweet for driving. Mt. Hamilton. Just watch yourself towards the middle assent as it becomes a dirty, 1.5 lane rd that's off camber. This will either toss you against the mountain itself or off the cliff onto someone's home 100ft below or so.

Have fun!

Ohhh and San Felipe itself is a nice little jaunt. Make sure to do that one at night during the week as any other time there are too many damn bicyclists.
